MOM's Night Out-This Thursday-Poblano's Mexican Restaurant

MOPS PlaydateWrap-up


We had a great time at the MOPS Playdate today. What a great turn out. The kids had a blast. The weather was nice for a picnic lunch out by the playground as well. Thanks for all that came out.

MOPS Playdate-Tuesday at LCC's gym

Tuesday, January 19th at 10am - 11:30am will be our playdate at the church's gym. There will be at least one inflatable jumping castle set up. Your kids can bring soft balls, little bikes, etc.
Bring a lunch it looks like it will be a nice day to play outside as well.

We will also be collecting items to send to Afghanistan to our soldiers. Please either bring the cards to the soldiers with you or plan on making one during this playdate. Any questions contact Jenn Duke.

"Tickle Our Taste Buds" 1/5 Winner

Congrats to Sara St.Clair for wining the "Tickle our Taste Buds" for the Jan meeting. She made these awesome Dark Chocolate-Dipped Macaroons. So instead of her picture, she provided us with one of the goodies. Enjoy making these.




Dark Chocolate-Dipped Macaroons
INGREDIENTS
3 large egg whites
3 Tbsp sugar
1/2 tsp vanilla extract
1/4 tsp almond extract
1 pkg (7 oz) sweetened flaked coconut
8 oz bittersweet chocolate, melted
PREPARATION
1. Heat oven to 325ºF. You'll need 2 baking sheets lined with nonstick foil.

2. Whisk egg whites, sugar and extracts in medium bowl until foamy. Stir in coconut until evenly mixed.

3. Drop by level tablespoonfuls onto prepared baking sheets. Bake 15 to 20 minutes until set and browned. Cool on wire rack.

4. Dip bottoms and tiny bit up side of macaroons in melted chocolate. Tap off excess chocolate. Place on same foil-lined baking sheets. Let stand at room temperature until set.

1/5/2010-Meeting wrap-up

A big thanks to Melinda Wilson for speaking at our January 5th meeting on Women are from Venus: Girlfriends. She referenced at least 12 scriptures that help determine what kind of friend we should be and showed us some great examples of friendships (Jonathan and David). As Melinda said, Jesus Christ is our ultimate "best friend", but it is essential to have girlfriends in your life, where you are not trying to get something from. Girlfriends that help keep you on track spiritrually and personally. We pray that each one of you have a girlfriend like this and if not that you will seek out what kind of friend you are in order to have a friend like the examples shown. Thanks again Melinda.

Women are from Venus: Girlfriends

We hope you all had a Merry Christmas and a Happy New Year. Its time to get back into the swing of things as this Tuesday January 5th is MOPS Tuesday. We will only have one meeting in January due to the Guilford County School work day that falls on our 3rd Tuesday's Meeting. Don't worry we have some great playdates and MOMS Night out planned as well.

Tickle Our Taste Buds Winner-12/15














Congrats to Flemania Negron on winning the "Tickle Our Taste Buds" for our Christmas Meeting. She brought us a little culture with her amazing Kicked Up Casserole.

Kicked Up Casserole

Ingredients
8 eggs
2 cups milk
half a green pepper (or any pepper on hand or scallions would be great to and cheaper )
salt about a tsp
1/2 packet of sazon (found in international isle its a Spanish spice I use in almost everything)
1 cup of cheddar
1 lb of chorizo (its a Portuguese sausage that my aunts ship to me from Boston every month)
a good substitute is " gaspars linguica " found at harris teeter only near other sausages ..the Mexican chorizo is NOT a good substitute it tasted much different

4 slices white bread ...cubed ...any sliced bread is fine
1tsp of "calda de pimenta" this is a spice also shipped from Boston but you can sub. a pinch of crushed red pepper flakes or some hot sauce

brown sausage .. if using " gaspars linguica be sure to remove casing and place in food processor to grind up ... which is what I do
add green pepper to saute
let cool
beat eggs milk spices and add cheese and bread to egg mixture
place in a buttered dish 13x9

place in cold oven at 350 about 45 min ...mine took closer to 55 min to get the right color
